Salon Culinaire

This year's Salon Culinaire looks to improve on the high standards set in 2015 which saw no less than seven gold awards presented.

The 2016 Salon organisers have again widened the appeal of the event by adding no less than four new categories; Petit Fours, Plated Vegetarian, Gluten Free Bake and Grab & Go Retail Item. The Salon takes place in the Chancellors suite, in the Rootes building, where you will have access to a kitchen for finishing touches and set up of your displays.  Your entry must be complete and ready for judging on Monday 21st March 2016 by 10am.

All classes are 'open class' and so the competition open to all, not restricted to chefs. Our judges will offer written feedback to all entrants, including advice on how to improve future submissions and your technique.  As always our judges are also very happy to discuss your submission after judging too.

Last year's Best in Salon winner, Robert  Stordy, Lecturer in Culinary Arts at University of Derby has some sage words for entrants, "The standards are as high as National competitions.  When you attend the competition look at the other competition entries, talk to other competitors, and always ask for feedback from competition organisers and judges".

2016 Salon Culinaire Classes

Canapés

Display of six varieties, each of six pieces. (36 pieces in total).   A suitable jelly may be used to enhance the presentation.  Area of display must not exceed 45x45cm.  This class will NOT be tasted.

Plated Main Course

Two different main courses for a VIP fine dining event, with budget food cost of £5.  Plates to be suitably accompanied with vegetables/potatoes/garnish.  This class will NOT be tasted.

NEW Plated Vegetarian Main Course                      

Two different main courses for a VIP fine dining event, with budget food cost of £5 per dish.  Plates to be suitably accompanied with vegetables/potatoes/garnish.  This class will NOT be tasted.

Restaurant Plated Dessert                                       

Two different plated desserts.  One portion of each.  Maximum plate size for each is 30cm.  This class will NOT be tasted.

NEW Petit Fours

Display of six varieties, each with six pieces. (36 pieces in total).   Area of display must not exceed 45x45cm.  This class WILL be tasted.

Decorative Exhibit

A decorative exhibit using sugar, chocolate, marzipan, pastillage, salt paste or fat of the competitor’s choice. Area of display not to exceed 60x60cm.  This class will NOT be tasted.

Novelty Decorated Cake

A novelty cake coated and decorated to competitor’s choice.  A dummy cake base may be used.  Area of display not to exceed 40x40cm.  This class will NOT be tasted.

Bread Display

Decorative display that must contain one loaf, one decorative loaf and four assorted rolls.  Exhibit will be cut and tasted, the taste will account for 60% of the marks.  Area of display not to exceed 60x60cm.  This class WILL be tasted.

Coffee Shop Style Sponge Cake

A baked sponge cake of the competitor’s choice.  Any shape is permitted, but must not exceed 30cm width.  This class WILL be tasted.

Cup Cake Challenge

To present a selection of three varieties of cupcake which are to include chocolate, plus two other flavours of the competitor’s choice.  Two pieces of each variety are required.  (Total of 6 items).  This class WILL be tasted.

NEW Gluten Free Bake

A savoury or sweet bake of the competitor’s choice.  Must be accompanied by an ingredients list to show that no gluten containing ingredients were used.  Any shape is permitted, but must not exceed 30cm width.  This class WILL be tasted.            

NEW Grab & Go Retail item                                                   

A sweet or savoury product, appropriately packaged and labelled.  Innovative and suitable for the student market.  Ready for retail within a café or grab & go area of a self-service restaurant.  One portion is required.  This class will NOT be tasted.
