The session:

The day will begin with presentations from Owen Gregory, an expert in service continuity who used to work in London where he managed outsourcing catering for a big city insurance company and has taught more recently at Buckingham University. Penny Green Head of Procurement at LSBU who will talk through LSBUs outsourcing experience and Arnaud Bouvier, the President and Lecturer in Hotel Management at ESH Paris, has briefed Professor Duncan Tayler on hotels outsourcing. They will ‘make the case’ for outsourcing university hospitality services and give examples of what outsourcing can achieve. In the afternoon, the group will work together to write a plan that would defend in-house provision against proposals such as those presented in the morning. These will include identifying the benefits of in-house services, identifying what in house services could do in response to the outsourcing threat, highlighting the opportunities that in-house services offer that outsourced services cannot. Those taking the course will then return to their place of work and develop a strategy to defend their services against the threat of outsourcing. The strategies will be uploaded for assessment by LSBU Academic staff.

The course will look at different business models that involve outsourcing to a greater or lesser extent. These range from full outsourcing of all hospitality services to outsourcing certain aspects of hospitality services e.g. special events.

Trainer details:

The workshop has been designed by Dr Duncan Tyler, Associate Professor and Head of Division for Urban, Environment and Tourism of London South Bank University and delivered by members of his team.
